Breakfast Burritos

BREAKFAST BURRITOS

½ of a 2.5 – 3 lb. Ham finely chopped
1 lb. Sausage browned
4 cups Grated cheese
12 scrambled eggs
1 large Onion diced & browned
(If available I add green peppers & mushrooms)
 12 tortilla shells

I usually make two different kinds – Ham & Cheese & Sausage & Egg.
You can make any combination you would like.
Soften tortilla shells in the microwave – do not over heat. Using above ingredients fill with desired ingredients. Roll into a burrito. Wrap with paper towel or saran wrap.
(Paper towels make them easy on the run.) When ready to eat, heat in microwave for 1-2 min.
When I make these I make plenty and then wrap them individually in saran wrap (or a paper towel) and keep some in the fridge so they are easy to warm up and some in the freezer.
