Sometimes I just need a reminder of the easy things I can come up with instead of making the same old thing over and over. So that is what this post is. :)
Ham
Eggs
Slice Ham thinly & warm in a frying pan until browned on both sides. To sweeten drizzle honey or syrup over ham while cooking. Serve with eggs cooked as desired.

Hoot n' Nanny's (German Pancakes)
1/4 cup butter
1 cup milk
6 large eggs (or 9 med.)
1 cup flour
1/2 tsp salt
1/2 Tbls cinnamon
1 Tbls. sugar
Melt butter in a 9x13 pan on 450.
Remove pan from oven and pour mixture over melted butter. Bake in oven for 15-20 min. until golden.
Serve with syrup, powdered sugar, or peanut butter for toppings.

Breakfast Burritos
BREAKFAST BURRITOS
½ of a 2.5 – 3 lb. Ham finely chopped
1 lb. Sausage browned
4 cups Grated cheese
12 scrambled eggs
1 large Onion diced & browned
(If available I add green peppers & mushrooms)

12 tortilla shells
I usually make two different kinds – Ham & Cheese & Sausage & Egg.
You can make any combination you would like.
Soften tortilla shells in the microwave – do not over heat. Using above ingredients fill with desired ingredients. Roll into a burrito. Wrap with paper towel or saran wrap.
(Paper towels make them easy on the run.) When ready to eat, heat in microwave for 1-2 min.
When I make these I make plenty and then wrap them individually in saran wrap (or a paper towel) and keep some in the fridge so they are easy to warm up and some in the freezer.

Easy Breakfast Time
There is not a lot of time to bake in the morning and so here are a few things I do to make breakfast go a little smoother. On Saturday I make a big breakfast and then freeze enough to last for the rest of the week.
Pancakes: Make a bunch and lay them single layer on tinfoil on a cookie sheet. Put cookie sheet in freezer for 10-15 min. Then transfer to a zipper baggie or wrap in saran wrap and continue freezing until use. To reheat, warm in microwave until warm.
Waffles: I make the waffle mix and then keep it in the fridge. It will keep for about 5 days. Use as desired.
Sausage: Make a bunch of sausage patties and keep them in the fridge or put them in the freezer.
Cinnamon Toast: I use an empty cinnamon spice bottle and fill it ¾ sugar and ¼ cinnamon and we always have it ready to shake on buttered toast.
Omelets: I save any leftovers from making the Breakfast Burritos and use them to make the Omelets
Hot Cereal: Cracked Wheat, Cream of Wheat, Oatmeal. Follow directions on the bag. I add brown sugar and butter to taste. Then when I serve it I pour a little milk in the bowl over the top of the cereal.

My reasons
I am waiting for the inspiration to hit - for someone else to take my fingers and start typing the words that will inspire you and fill you with the courage and strength to make it through your challenges. I am still in charge of my finger muscles, nothing is taking over. :) I guess you are just stuck with me.
I myself have had many challenges. That is what has inspired me to start this blog. The first time I was blessed with help from the Bishops Storehouse life was crazy. I couldn't even think about recipes and how to cook new things from ingredients I was not familiar with. I was too stressed to read the pages of a cookbook let alone put it all together in a bowl. Somehow we made it through. Years went by and I found myself needing the blessings of the storehouse again. This time was really different. I was in a position to try new things, to really cook for my family. I know that Heavenly Father blessed me with the opportunity to see both situations so that I could share and bless others. I am grateful for this opportunity. I have been praying for a chance to serve, to give back after all of the blessings I have recieved at the hands of others who were willing to serve me.
These are not fancy recipes. They are practical. Some day I may share my life story, for now, here are some recipes. I hope they make your life a little more full :)
